Khoresh Bademjan(aubergine stew) with rice
Khoresh Bademjan is a traditional Persian recipe. Bademjan or Bademjoon is aubergine in Farsi and Khoresh means stew and it’s served with rice. The taste is great.
You can use Indian or Italian aubergine.
At first cook the cubed beef with water, onion, turmeric powder and black pepper until tender.
Then fry the sliced onion and add some tomato paste and saute a bit more. Next, incorporate the broth of the cooked beef and salt and then add the cooked beef, baked aubergine, sour grape juice and a bit of saffron. At the end simmer on the heat until the sauce has thickened.
